Scientists Found 5,300-Year-Old Viable Yeast in a Mummy’s Gut. They Baked Sourdough With It. It Was “Very, Very Good.”

Eurac Research in Bolzano cultured four cold-adapted yeast species from Ötzi the Iceman's preserved gut — alive after 5,300 years in Alpine glacial ice — and baked a sourdough loaf. Lead researcher Mohamed S. Sarhan: 'Very, very good.' Beer is next.

the yeast colonies were preserved inside Ötzi's gut. Four cold-adapted species: Glaciozyma, Phenoliferia, Goffeauzyma, Mrakia — none are common baker's yeast.
